Varieties  include white first mackerel (also known as Spanish mackerel), horse  mackerel (also known as Mackerel), California horse mackerel, amberlina  and American and South Asia waters ginseng. Mackerel is a very fat, dark flesh fish, so it is suitable for baking, smoked or grilled barbecue. It can be cooked with white wine, or it can be eaten with lemon juice or similar acid to preserve its taste. Mackerel is available all year round.
